Demonstrating Commercial Foodservice Cooking Performance Using Hydrogen/Natural Gas Blends
In a newly awarded DOE project, GTI Energy aims to develop and demonstrate an advanced 3D-printed low-emissions matrix burner technology and assess cooking performance of commercial foodservice equipment using hydrogen and hydrogen/natural gas blends. The effort will promote adoption of commercial foodservice equipment that reduces energy consumption and emissions.
GTI Energy has previously tested ranges, ovens, griddles, and fryers to enhance operational performance with low-emission fuels. The testing focused on how the cooking characteristics or equipment changed as hydrogen was blended with natural gas. Cooking characteristics include the quantity and quality of the food cooked with an emphasis on food appearance, taste, and texture, and results met the requirements of the industry and end users.
